Chicken Alfredo Casserole
My very best friend in the whole world Karen posted a recipe that was a chicken Alfredo lasagna.  It looked really tasty.  Only problem... I did not have any lasagna noodles... 
So I came up with my own creation...
Here are the ingredients...
Ziti noodles, 2 jars Alfredo sauce, fried onions, chicken, mixed vegetables, and cheese

I cooked the noodles and vegetables and added them to the cooked chicken and Alfredo sauce
 Here is what it looked like before it went into the oven.. Make sure you have plenty of sauce... The noodles will soak up some of the sauce...

 
I baked it for 20 minutes and took out of the oven
 
Topped it with French's onions and cheese

 
Then put it back in the oven for   10 more minutes...


 
 This is how it turned out...



It was super yummy... Enjoy!!!

After cooking for 2 days for Thanksgiving...
I was too tired to cook today...
After looking through my pantry I came up with this leftover casserole..
I am not sure if I have seen this somewhere else or not...
But it sounded good when I saw the ingredients in my pantry...
Here is what I did...
I added the water , milk and butter per the directions on the back on the loaded casserole box..
Then I drained the peas and cut up the leftover ham and put it in the casserole dish...
Baked at 40-45 minutes and when it is done... it looks like this...

This is how it looked on the plate.. It was amazing... The whole family enjoyed it so much...


My husband wanted me to post the end result of the dinner...
I think that picture says it all!!!

Tater Tot Casserole

I have seen a ton of Tater Tot Casserole recipes...
So I thought I would make the easiest one I could and still very tasty...
The ingredients are...
Hamburger, beefy onion soup mix, cream of mushroom soup, cheese and tater tots...
First thing you want to do is brown the hamburger and drain...
Then mix dry soup mix and cream of mushroom soup together...
Stir in hamburger...
Then put in a casserole dish...

Next put on the tater tots...
Then bake for 25 minutes at 350.
After 25 minutes .. take out of oven and top with cheese..

And it comes out like this...
And serve plate...
And it looks like this...

Meatballs and Gravy served on rice

Well,
Today is a chilly day...
And thanks to daylight savings time...
It is "fall back time"
Well my body still does not know whether to fall back or spring forward...
So the only solution was to come up with a comfort food...
I wanted something nice and quick..
So I opened the freezer and pantry...
Here is what I came up with...
The ingredients are...

I took frozen meatballs, rice, brown gravy mix and beefy onion soup mix..

I browned the meatballs...
I put the rice in the crock pot and added the beefy onion soup mix and water...
Then I added 2 cups of water and 2 packages of the dry gravy mix...
And it turns out like this...

BBQ Spareribs



Today I wanted bbq spareribs...
So i took out the old crockpot and got ready..
In my opinion... there is only one way to cook bbq ribs...in the crockpot...
I have seen alot of people cook ribs.. from boiling them, to grilling them to smoking them...
but mine way is totally fool proof...
You can not mess it up...
There are only 3 ingredients...
here they are

That is it...
Hard to believe
First of all, cut the onions and lay on the bottom of crockpot...

I do this so that the meat has something to lay on ...
Next.. put on some of the bbq sauce...
Easy so far...isn't it...
Then lay the meat on top of the onions and sauce...
Then put some more sauce on top of the meat...

That is it...
Let the slow cooker do the work for you...
Depending on the amount of ribs...
It could take 6-8 hours...
But it is well worth the wait..
And when you serve it....
It looks like this...
I served it with rice...

Strognaff .... my way

Most people take hours to cook strognaff...
Not me...
3 (or more) ingredients and you are ready to go...
And the ingredients are...



I like to add onions and/ or green peppers also.
First you want to start browning your hamburger...then drain it...

While you are cooking your hamburger... start your water to boil the noodles...
When the water comes to a boil... add noodles and cook for 10-12 minutes...
Then add 1 cup of water for each packet of gravy mix you are going to use...
Put it in the pan you cooked the hamburger in...and make sure you are stirring it...
When it comes to a boil... simply add back the hamburger...

And by the time it is ready ... Your noodles will need to be drained...
And when you put it all together...
It looks like this...
 
It really could not be easier...
And it is so delicious...

It has been quite awhile since my last blog..
I guess you can tell that peak season is here...
I needed something extremely easy and tasty for supper...
Looked in my pantry... oh this is what I came up with...
Shepherds Pie Loaded...
ok
What does loaded mean? Well I put loaded mashed potatoes on top...
That is right.. mashed potatoes with sour cream, chives, cheese and bacon already in there....
One word to describe my creation....
Amazing....
Here are the ingredients...

I used instant loaded mashed potatoes, corn, hamburger, cheese, cream of mushroom soup and brown gravy mix..
I fried the hamburger... while it was draining I added one up of water to the gravy mix.. and 1/2 can of cream of mushroom soup.. the dry onion soup mix is optional.. you can add with gravy or not...

After the gravy and soup mix is heated... put the browned hamburger back in and stir...
Cook the mashed potatoes per back of box directions..
Lay hamburger on bottom of dish
Then add boiled corn
Put the loaded mashed potatoes on top and sprinkle with cheese...
Cook @ for 20 minutes...@350
And it looks like this when it is done...
And after your family digs into it ... This is what you have left...well maybe...

Lasagne recipe

Hi,
Today was a long and busy day...
What a perfect day for lasagna...
I literally through it together...
Here are the ingredients...
My son wanted to get into the picture with the ingredients... ( he actually helped me cook it all.. )
I used cottage cheese, mozerella cheese and a three cheese blend.. of course there were eggs, lasagne noddles, and i used spaghetti sauce that has vegetables.. (anything to get more veggies) and of course hamburger...
I also do not boil my noodles.. i put them right in from the box..
The secret is to add water to the sauce and it will soak into the noodles and cook them...
Your sauce should look like this...
Now is the time to mix together the cottage cheese, eggs,, seasoned salt and 1/2 cup of each cheese...
start with a layer of sauce of the bottom of pan...
Next put a layer of noodles over the sauce...
Then put a layer of cottage cheese...
then sprinkle cheese on top...

Then continue to layers..
Make your last layer of noodles..
End with sauce..
Put in over for 45 minutes to 1 hour covered with aluminum foil...


After you bake it... Take off the foil and let sit for at least 15 minutes.. then cut it and serve

Loaded Baked Potato Salad

I figured since I was on vacation this week...
I would be eating alot of sandwiches...
So I thought it would be a great idea to make loaded potato salad to have with them...
Start by peeling your potatoes.. rinse and put in cold water on the stove... It will take about 10-15 mintues to cook them... you will want to take a fork and put through the potato.. you want it to still be a little firm.. Do not let them get too mushy.. or you will have to make loaded mashed potatoes...(which is the same recipe.. but one you mix gently and the other you mash..)


Here are the ingredients...
Cook the potaoes and let them cool ... then all you do is put all the ingredients in a bowl to mix
I used about a pound of potatoes... 1 cup of mayo, 2 tablespoons of mustard , 1/2 cup sour cream and 1 cup of cheese..I also put seasoned salt in there (forgot to put it in the picture ) . I had some bacon in the freezer.. I just put the bacon in the microwave for about 15 seconds.. then cut it up.... And then I mixed it all up... Do not mix too much or you will have loaded mashed potatoes instead...

Chili Recipe

Well... today is the perfect day for chili...
Not hot but not cold either...
Just a day for some delicious chili.
My husband and I have a huge debate on the making of chili...
I think it should have corn in it... My husband on the other hand.. does not think corn is supposed to be in chili...
But I guess everyones taste is different...
ok... here we go...
Here are the ingredients for my chili...

As you can see I used frozen hamburger from my freezer...
When I cook and brown my hamburger... I put a cup of chicken broth in there while I cook it..
It adds flavor plus it makes it super moist... And by the time you have finished cooking the hamburger, the chicken broth has soaked into the meat...

As you can see I have added some of the onions.. I love onions... I think they are wonderful in chili. I put some in the hamburger while I am cooking it ... also put some straight in the crock pot...

After cooking the hamburger... Put with chili powder, tomatoes, onions, onion soup mix and beans in the crock pot.. Stir everything together all you have to do is wait a couple of hours... And after waiting ... look what you have...



This is how I like my chili... with sour cream and shredded cheese... Or....

Either way... it is easy and so good...

Chicken and dumplings...

It is a chicken and dumplings day...
After going to the Seafood Festival where I live...
I decided that I need something really good and filling for supper...
I am living right by the bay...
And do not eat seafood...
I know...
go ahead and say it...
But I do not eat seafood...
There are several ways to make chicken and dumplings...
You can bake or boil the chicken...
Today I boiled it...
There are a couple of benefits in doing this...
First... you have chicken broth from boiling it.. and 2nd ...
it literally is very moist comes apart easily...
Put the whole chicken in the water and start to boil...


Remove the chicken after it has cooked...
Save the broth...
while you are waiting for the chicken to cool enough to cut in chunks...
You will need to add the following ingredients...
Chicken broth, instant onion soup mix, can of cream of mushroom soup and frozen mixed vegetables...
Turn up the heat and start it to really cooking...
Then start cutting up and the chicken in chunks...
And add it to the veggies cooking in the broth...Next you want to taking your baking mix and add water...
You are going to make basically a extremely flat biscuit...
then cut them in squares...
and put them in the boiling stock pot with veggies and broth...the pot will look like this...
but remember... the dumplings have flour on them ... so the broth will start to thicken...
After a few minutes... the dumplings will puff up like this.. and look like you have a ton of them in there...
Do not worry.. after about 20 or 30 mintues they will shrink down ...
And then when you put it in a bowl...



And this is what it looks like...

OK...
I also made meatloaf for supper.
My husbands favorite meal...
To be honest ... I think it would be his very last meal.. lol
We have been out to eat at alot of places...
And Mike will only eat my meatloaf...
Here is all there is to it..
The ingredients are
Hamburger, ketchup, mustard, cream of mushroom soup, oatmeal, onion instant soup mix, onion , seasoned salt and eggs... ( you probably have all these in your pantry)
Mix everything together..
i use cup of ketchup, 1/4 cup mustard, 1/2 can of soup, 1 cup oatmeal, dice onion, and 2 eggs,
Bake at 350 for one hour.. I also made little ones to put in the freezer for nights i do not want to cook.
I let them sit awhile after I take them out of the oven.. And it looks like this when it is served..
